The handbrake can barely stop the Pinz from rolling uphill, how is it going to counter a 9-tonne winch? I have hammered on the lever, as it happens. Soot indicates truck running too rich (i.e. too much fuel or not enough air) - have you cleaned your air filter lately?

Have you checked the levels in the float chambers? If you "rebuilt" the carbs then you might have damaged the floats or made them stick...

Have you changed the ignition (HT) leads? If you're getting good spark at the coil end but not at the plug end it indicates the leads might be at fault?

don't know that it makes a difference but with your added flange the headers become one solid unit. With the original flex system they are two separate items. With the flex kit sold by the dealers the headers can move independent of each other even though they are tied together (after the flexes). ...

Hopefully that goes some way to explaining it...
