Here's a small update as to what I've done. It's interesting how the rock fractures make it look like that section your standing on could drop off at any moment.

I'd like to take a couple of years to explore Utah, so many places to see. Some of the best geological formations this country has to offer that's for sure.

I know this sounds counter intuitive but bear with me. Since you are installing a new belt the spacer rings should be mounted on the inside of the outer V pulley half and not between the V pulley and nut. I believe the shims are interfering with you tightening the nut down properly. The shims go to ...

You can try calling these guys, they sell a full NOS heater kit and may sell spare fuel pumps for them.

I had one but decided to not use it in my build. I didn't want to sacrifice the room it would take up for just heating water, opted for heating water over a stove or by solar means.
