The sender is just a variable resistor, close to zero ohms when full and about 230 ohms empty. When you ground the sender wire the gauge should peg full (assuming the ignition is on). Watch both linkages carefully as you just start to crack the throttle by using the hand control. Probably you have one carb just starting to open before the other, the early one has the shaft linkage a half turn too long. I, too, have my handles mounted to the door tops with tee nuts and also never bolt the door tops on; they don't rattle at all, but I did put a strip of camper foam tape under the door top to protect the door from getting scratched by the tee nuts.
