Jim, You might want to do a compression test if you are under 8:1 compression ratio. You should be well over 120psi/cylinder, more in the range of 130+. The 2.7L conversion gets most of it's punch from compression and Cam lobe profile. The capacity increase is actually less than 2.7L with Jim's ARIA...

Yes, both the ROSS and ARIAS piston options for the 2.7L
increase compression. The conversion is aimed at Torque
improvement at the low end, so Compression and Cam profile
are the biggest kickers.

If I read your post right, the Gauge shows no reading ? So that could be a bad Gauge or a bad sending unit. To eliminate the Gauge as the bad boy, you want to directly ground the terminal on the Gauge that connects to the output of the sender to GND -- that would be right behind the dashboard. If th...

I think what you tried was directly grounding the terminal on the gauge from
the Sending unit to ground and then saw no meter movement -- right?

One additional thought, you may have a leaking master cylinder seal. This can result in no loss in fluid but fluid bypassing the master and a resultant loss of force on the front slaves. Might want to pull the drums off and give a close inspection of the shoes etc and a clean
up with Brake cleaner. Esp, if the braking was noticeably different before and after wheeling.
