Maximum CHT?

Being the cheapskate I am, I'm reluctant to pay $30+ for a CHT sensor that consists of an NTC thermistor in a cheap ally ring. I'm wondering whether I could just buy a thermistor and wire it myself, attached to a cheap ally ring (I've got some large crimp terminals I could JB Weld it into...)
Just wondering what temperature range I should go for, though? I'm planning on bolting it under the head bolt on the #4 cylinder
