It's not in a truck, but Deutz tractors often used air-cooled diesel engines, I believe.

Tatra 812 (8x8) used a V12 ac diesel.
Deutzs have been used in many medium duty trucks.. TAM, SAMIL 20 and Magirus.

Ford experimented with Deutz diesels in their pickups back in the '80s. Very, very cool stuff. From what I've read the only reason they didn't proceed with mass production were changes in EPA regulations. A quick YouTube search for Deutz Ford yields fun results.

The specs on the Tatra 813 engines are pretty wild:
18 liter V12 = 1.5 liters PER piston!
Power output 198.6 kW (266 hp) @ 2000 rpm
Torque output 990 N·m (730 ft·lbf) @ 1300 rpm
Dry weight 1,035 kg (2,282 lb)
